Recipes from Maldives Chilli Paste with Fish Flakes - Masmirus

 



Ingredients


1/2 cup chilli flakes.

3 tablespoons cooking oil.

1 medium-sized onion, cut thinly

Six tiny garlic cloves, finely sliced

1 tbsp powder curry leaves, 

¼ cup dry tuna chips/flakes.

1 teaspoon of garlic paste.

1 tablespoon dark soy sauce.

1 teaspoon of tomato paste

½ teaspoon salt

½ teaspoon pepper

¼ teaspoon lemon juice.


How to cook:


Add oil to a pan and warm over low heat. Then, add onion and curry leaves.


Once the onions have started to turn colour, add the garlic.

After 5 minutes of slowly simmering the onions and other ingredients, add the tuna flakes.


Cook for about 5-8 minutes, without scorching, until gently browned.

Combine the chilli flakes with the garlic paste, soy sauce, salt, and pepper.

Cook for about 3 minutes, then add the tomato paste.

Continue to cook until everything becomes red and the chilli flakes become crunchy.

Now, add the lemon juice and stir.

After 2 minutes, turn off the heat and let it to cool down.

Once it has cooled enough to touch, transfer it to a small container.
