MEDITERRANEAN RECIPE, GREECE SPINACH BALLS

2 pounds fresh spinach 

3 eggs

3 tablespoons melted butter 

1 cup grated kefalotiri or Parmesan cheese 


½ cup crumbled feta cheese 

½ cup minced dill salt and pepper to taste 

1 cup breadcrumbs 

vegetable oil for frying




TUTORIAL

Remove the stems from the spinach and wash it well. Please do not drain. Place in a large saucepan, cover, and steam over high heat for three minutes, or until wilted. 

Drain and slice the vegetables. 

Combine all of the ingredients (Except for the breadcrumbs and oil)

Make 1-inch balls out of the mixture. 

Deep-fry in heated oil after being rolled in breadcrumbs. 

Dry with paper towels. 

Serves warm.


TIPS

Three 10-ounce packets frozen chopped spinach can be substituted for the fresh spinach. It is not required to thaw the frozen spinach beforehand.

Simply defrost, drain thoroughly, and continue with the recipe.
