1 pound cheese, such as kasseri, feta, kefalotiri, or kefalograviera

1 stick (¼ pound) butter

3 tablespoons fresh lemon juice 




TUTORIAL

Slice cheese into ¾-to 1-inch-thick cubes or slices. 

Melt butter and fry cheese for 3 minutes on each side, or until melted and gently browned.

Sprinkle with lemon juice. Serve hot with thick bread or  crusty bread. 


TIPS

that instead of frying the cheese, it can be broiled. Use no butter if grilled.

Place the cheese in an ovenproof dish. Broil for 3 minutes without rotating. Sprinkle with lemon juice.
