ONE 20-OUNCE CAN CHICK-PEAS
½ CUP MINCED ONION
2 TABLESPOONS BUTTER
1 EGG, BEATEN
2 TABLESPOONS MINCED PARSLEY SALT AND PEPPER TO TASTE
DASH OF DRIED OREGANO
2 TABLESPOONS GRATED SHARP CHEESE, SUCH AS KEFALOTIRI
1 TO 2 TABLESPOONS WATER (IF NEEDED)
FLOUR FOR ROLLING
VEGETABLE OIL FOR FRYING
TUTORIALS
Chickpeas should be drained and rinsed with cold water.
Mash with a fork, or mix or process in a blender or food processor.
Remove from heat after the onion is tender and yellow.
Combine chickpeas, beaten egg, parsley, salt, pepper, oregano, and grated cheese in a mixing bowl.
If required, add 1 to 2 tablespoons water to make a soft mixture. Form into 2-inch patties.
Roll in flour and cook till brown in oil.
Serve with Sesame Seed Sauce on the side.
SESAME SEED SAUCE

1 TABLESPOON MINCED GARLIC
½ CUP TAHINI (SESAME SEED PASTE)
6 TABLESPOONS FRESH LEMON JUICE APPROXIMATELY
⅓ CUP COLD WATER
½ TEASPOON GROUND CUMIN SALT TO TASTE
TUTORIALS
Mix the garlic into the tahini, then gradually add the lemon juice and cool water to form a smooth, creamy dressing.
Add the cumin and salt.
