SOUVLAKIA MEZE
Souvlakia is the Greek name for little pieces of beef skewered with vegetables and then cooked over charcoal.
GROCERIES
ONE 6-TO 8-POUND LEG OF LAMB, BONED AND TRIMMED
MARINATION
½ CUP OLIVE OIL
1 TEASPOON GROUND CUMIN (OPTIONAL)
1 TEASPOON DRIED OREGANO
2 BAY LEAVES, CRUSHED
1 TABLESPOON MINCED GARLIC
1 CUP CHOPPED GREEN BELL PEPPER
1 CUP CHOPPED ONION
¼ CUP PORT WINE
¼ CUP WHITE VINEGAR
¼ CUP FRESH LEMON JUICE SALT AND PEPPER TO TASTE
TUTORIALS
Cut the lamb leg into 1-inch chunks.
Stir together all of the marinade ingredients.
Marinate the lamb cubes for several hours or overnight. (The longer the components marinate, the greater the flavour of the recipe.)
Preheat the oven to 375°F.
Thread meat onto 5- or 6-inch-long wooden skewers when ready to serve.
Bake for 12 to 15 minutes, or until beautifully browned, flipping periodically.
Souvlakia should be served on skewers.
